fried yellowtail snapper w/ circassian rice, mango salsa

Again, not really the prettiest dish. At least not in this picture. In real life this dish has great color and people always gasp when you place it on their table. The rice is a simple pilaf flavored with carrot, red pepper, onion, raisins and a touch of turmeric. The salsa is simple as well: mangoes, diced red onion, cilantro, lime juice and a touch of cumin. The fish was scaled, scored, seasoned, floured and fried, then seasoned again. Sean made the eyes – a green olive stuffed with one of our pickled carrots.
