It was a busy winter. We fed quite a few people. I lost my voice a couple of times. We went through a handful of cooks and dishwashers, ultimately finding a great crew, but of course they left for their summer jobs up north. We cut through hundreds of pounds of fish, pork belly, skirt steak. Cleaned hundred of pounds of fresh mussels, braised a thousand chickens and fed the staff a million burritos. Now that it’s summer we can breath again.
